The complex flavors and cooking techniques produce seven flavor profiles: sweet, hot, salty, bitter, sour, aromatic, and pungent. Szechuan cuisine is famous for its pungent and bold flavors resulting from the abundant use of garlic, chili peppers, and most notably, the tongue-numbing Szechuan “flower pepper”.
